Whether you want to change it up on the big day or make great use of your leftovers, we’re guessing you’ve never had a burger like this!

Chef Nick Farrer is showing us how to utilize our Thanksgiving turkey leftovers to make a new meal.

Turkey Burger Patties

Makes: 4 burgers

Prep time: 10 minutes

Cook time: 10–12 minutes

Ingredients:

  • 1 ½ lb ground turkey (93% lean works best for juiciness)
  • ¼ cup finely diced onion
  • 1 tbsp Dijon mustard
  • 2 tsp Worcestershire sauce
  • 1 ½ tsp kosher salt
  • ½ tsp black pepper
  • ½ tsp garlic powder
  • 1 tsp fresh thyme leaves (or ½ tsp dried)
  • 1 tbsp olive oil or butter (for cooking)

Directions:

  1. In a bowl, mix turkey, onion, Dijon, Worcestershire, salt, pepper, garlic powder, and thyme. Don’t overmix — just until combined.
  2. Form into 4 patties, slightly larger than your buns (they shrink a bit).
  3. Heat olive oil or butter in a large skillet or grill pan over medium-high heat.
  4. Cook 5–6 minutes per side, until internal temp hits 165°F.
  5. Rest 3–5 minutes before assembling.

Cranberry Aioli

Makes: About 1 cup

Ingredients:

  • ½ cup mayonnaise
  • ¼ cup whole berry cranberry sauce (canned or homemade)
  • 1 tsp Dijon mustard
  • 1 small garlic clove, finely grated or minced
  • ½ tsp lemon juice or apple cider vinegar
  • Pinch of salt and black pepper

Directions:

  1. In a bowl, whisk all ingredients until smooth and pink.
  2. Taste and adjust — add a little extra cranberry sauce for sweetness or lemon juice for tang.
  3. Chill until ready to use.
