Owner and Chef Eugenia Theodosopoulos of Essence Bakery Cafe shares a recipe for turkey for a sliders great appetizer dish.


• 2 pounds of fresh ground turkey meat

• 1 cup white onion, chopped very fine

• 1 teaspoon of dried oregano

• 2 teaspoon of New Mexico Chile powder

• 2 teaspoon of ground coriander and cumin mix

• 1 tablespoon of fresh lemon or lime juice

• 2 tablespoons of butter

• Salt and pepper

• 2 eggs, whisked

• 2 tablespoons of oil for last minute saute

• 3 cups chopped sweet peppers that will fit on slider easily

• 1-3 chopped jalapeno peppers

• 2 tablespoons of butter

• 2 tablespoons of heavy cream

• 1 tablespoon of white wine

• 3 cups Oaxaca, mozzarella, swiss or cheddar cheese


In sauté pan, melt butter.

Add minced onion, oregano, chile powder, ground coriander and cumin and sauté until onion is translucent and herbs are fragrant.

Add lemon juice and allow to cool.

Place turkey meat in a bowl and season with salt and pepper.

Add eggs and cooled onion mixture to combine.

Saute a small amount of turkey meat to check for seasonings.

Make between 1 1/2 - 2-ounce size patties depending on the size of slider roll you find.

Makes between 16-24 sliders.

May be prepared 1-2 days ahead.

Preslice the rolls before preparing the burgers.

Prepare topping ahead: Sautee sweet peppers and jalapenos in melted butter over medium high heat. Season with salt and pepper.

Add white wine and cream and reduce mixture until peppers are just moistened.

Set aside until ready to use.

May be prepared ahead 2 hours before serving.

Gently reheat when you begin sautéing the turkey burgers.

In separate sauté pan over medium high heat add some of the oil.

Without crowding the pan, sauté turkey burgers on one side.

Season with salt and pepper if needed.

Flip when lightly browned, top with some of the sautéed peppers and cheese.

Continue to cook and melt the cheese.

Serve hot in sliced slider roll.
