Chef Mario Gebran from U.S. Egg shares a recipe for pancakes cooked a different way, great for a large get together.

• 1 1/2 cups all-purpose flour

• 1 teaspoon Salt

• 1 tablespoon White Sugar

• 3 1/2 spoons Baking Powder

• 1 1/4 cups Whole Milk

• 1 Egg

• 3 tablespoons melted butter

In a large bowl, sift together the flour, baking powder, salt and sugar.

Make a well in the center and pour in the milk, egg and melted butter (make sure the butter is at room temperature);mix until smooth.

After the batter has rested for at least 15 minutes prepare the baking sheet by coating it well with butter spray.

Heat the oven to 425 degrees.

Pour pancake batter in an even layer onto the baking sheet and add toppings.

To ensure the batter is even give the baking sheet a couple of slight wiggles.

Bake for 15 minutes then brush on some melted butter before serving.

Ideas for toppings: bananas and unsweetened chocolate chips, any fruit

(except watermelon). Cinnamon and diced apples, poppy seed and Lemon

Zest with Ricotta cheese, coconut and pineapple
