Chef Russell LaCasce of ZuZu Restaurant & Cafe shares an easy recipe for a pan seared halibut.
• 6 ounces of Alaskan or California Halibut
• 2 ounces of fresh English peas, blanched
• 2 ounces of fresh fava beans, shucked, blanched and cleaned
• 1 ounce of diced pancetta
• 1 ounce of spring onion
• 1 green garlic, chopped
• 2 ounces of pea puree
• Salt and pepper
In a hot pan, add oil, season halibut, and sear for a beautiful golden brown.
Put in a 350-degree oven to cook through and set aside.
In another hot pan, sauté green garlic, onion, and pancetta to render.
Add a nice pad of butter and add fava beans and English peas.
Season with salt.
Spoon pea puree down and place veggies on top.
Lay the halibut on top and garnish with pea tendrils.
