Registered Dietitian Jamie Miller from The Village Health Clubs shares a recipe for a healthy salad.


• 1/2 cup microwavable quinoa packet

• 1 cup bagged salad kit

• 3 ounces of precooked shrimp (or shredded chicken)

• 1 tablespoon of hummus

• 2 tablespoons of feta

• Optional: wedge of lemon


Cook quinoa packet according to package and let cool.

Mix bagged salad (no dressing) and quinoa in a bowl, then top with precooked shrimp, or protein of choice.

Add hummus and a sprinkle of feta to the bowl, and lemon wedge if desired.
