Chef Christopher from The Collins shares a recipe for an easy marinara sauce full of wonderful flavor.


• 2 cups of San Marzano tomatoes (pureed)

• 2 cups of fresh tomatoes (¼” x ¼”)

• ¼ cup of extra virgin olive oil

• ½ cup of diced yellow onions ¼” x ¼”

• ½ cup of diced celery ¼” x ¼”

• 1 tablespoon of minced garlic

• 1 tablespoon of kosher salt

• 2 tablespoons of dried oregano

• 2 tablespoons of dried whole thyme

• 1 tablespoon black pepper

• 1 small bunch basil


Cook the sweat onions and celery in a large pot with extra virgin olive oil for 4-5 minutes then add garlic and cook until aromatic.

Add tomatoes, salt and spices and simmer on low heat for 45 minutes to 1 hour.

Add basil and cook an additional 30 minutes.
