Chef Joey from Sushi Roku in Scottsdale shares recipe for grilled avocado with a tasty yuzu soy sauce.

INGREDIENTS

• 1 Avocado

• 1/4 tsp Sesame Seed

• 1/8 tsp Shichimi Pepper

• 1/4 tsp Chopped Scallion

• 1 ounce of Yuzu Soy

• 1 Lemon, wedge

• 3 parts Yuzu Juice

• 5 parts Soy Sauce

INSTRUCTIONS

Combine all ingredients and set aside.

Cut the avocado in half and remove the pit.

Slice squares into the avocado but leave it intact. Season the inside with salt and place on a hot binchotan grill.

Grill for 2 minutes then turn to establish grill marks. Turn over after an additional 2 minutes.

While grilling the skin side, turn again after 2 minutes. Once the squares in the avocado start to rise, the avocado is cooked.

Season the inside with salt and place on a hot binchotan grill.

Pull them off the grill and season with yuzu soy.

Then sprinkle togarashi and sesame seeds. Finish with scallion and serve with lemon wedge.
