Chef Jeff from Elote Cafe shares a recipe for avocado tacos.
• 2 large avocados, sliced
• 1/2 cup of buttermilk
• 1 egg
• 1/4 teaspoon of salt
• 1/4 teaspoon of pepper
• 1/4 teaspoon of ground cumin
• 1/2 cup of cornflake crumbs
• 1/2 cup of cornstarch
• 1/2 cup of maseca
• 1/2 cup of finely ground green raw pumpkin seeds
Mix buttermilk, egg, salt, pepper and cumin. Stir all that up really well.
Dip the avocado slices in that mixture.
Mix cornflake crumbs, cornstarch, meseca and ground green raw pumpkin seeds in a bowl and toss together well.
Let avocado soak for about 5 minutes in the milk mixture.
Then pat them all over with dry mixture.
Bury them in dry mixture and leave them buried until ready to fry.
Heat oil to about 350 degrees and fry each slice for about a minute until crispy.
