Chicken and Waffles Brown Butter

Waffle Batter


2 eggs

2 cups all purpose flour

1 ¾ cups milk

½ cup vegetable oil

1 tbsp sugar

1 tbsp bakign powder

¼ tsp kosher salt

½ tsp vanilla extract


1. Beat eggs with whisk

2. Sift dry ingredients together and whisk into eggs with milk and vegetable oil

Chicken Flour


3 cups all purpose flour

1 cup corn starch

2 tbsp kosher salt

2 tbsp smoked paprika

2 tbsp granulated garlic

2 tbsp dried thyme leaves

1 ½ tsp black pepper


1. Mix all ingredients with a wire whisk

Chicken Batter


1 lb Golden Dipt Fish Batter

2 ¾ cups cold water

2 ½ tsp granulated garlic

2 ½ tsp kosher salt

2 ½ tsp dried thyme

2 ½ tsp smoked paprika

2 ½ tsp black pepper


1. Mix ingredients with a wire whisk until very smooth

2. Hold below 41 degrees

Candied Pancetta


1 lb pancetta

3 oz maple syrup

2 tbsp brown sugar


1. Cut pancetta into ¼” cubes

2. Place a large pot over medium heat and add pancetta

3. stirring regularly continue to cook on medium until pancetta is slightly browned and

soft. Taste the pancetta to make sure it is not chew or over cooked

4. Strain pancetta, removing fat and return to pot

5. Add syrup and brown sugar, mix well until sugar has dissolved

Cinnamon Butter


4 oz unsalted butter

2 tbsp honey

½ tsp ground cinnamon

½ tsp kosher salt

¼ tsp vanilla extract


1. Combine all ingredients and mix until smooth
