Plantain Soup

Caramelized Plantain Soup


EVO 1/4 C

Butter 2 T

Plantain 3 EA Ripe / Chopped

Salt 2 t

Sugar 2 t

Tumeric ½ t

Black Pepper ½ t

Scallion ½ C Chopped / Packed

Onion ½ C Chopped / Packed

Carrots 6 OZ Skin On / Sliced Thinly

Garlic 1 OZ Roasted

Habanero 1 EA Seeded / Minced

Orange Juice 1 C

Water 3.5 C

Coconut Milk 1 C

1. In wide bottomed pot, melt Butter with EVO.

2. Add Plantain, Salt and Sugar. Sauté until plantains are brown and sticky.

3. Add Tumeric, Scallion, Onion, Carrot, Garlic and Habanero, sauté until onions are soft.

4. Add Orange Juice, Water and Coconut Milk. Simmer on low, uncovered for 25 minutes.

5. In food processor or blender, puree until very smooth.

6. Pass thru medium sieve.
