Avocado Chocolate Mousse Filled Strawberries

• 1 pint strawberries, washed

• 1 large ripe avocado

• 1/4 cup unsweetened cocoa powder

• 2 tbsp almond or coconut milk

• 1-2 tbsp honey, Agave5, monk fruit (or stevia to taste)

• 1 tsp natural vanilla extract

• ⅛ tsp salt

• Optional extras: crushed nuts, cocoa nibs, or unsweetened dried coconut flakes

Halve the avocado, remove the pit, and scoop out the flesh into a food processor (or blender). Add cocoa powder, milk, sweetener of choice, vanilla extract, and sea salt to the food processor and blend until smooth and creamy. Refrigerate until ready to use. Using a knife, hollow out the stem of the strawberry to create an area to hold the mousse. Cut the bottom tip of the strawberries, so they can stand upright. Place the chocolate mousse in a piping bag with a tip of your choice (or a ziploc with a small snipped corner). Pipe the chocolate mousse into each strawberry. Sprinkle with your choice of toppings, if using. Serve immediately or refrigerate until ready to serve.

Double Chocolate Chip Brownies (Vegan, Paleo, Gluten Free and Low Sugar Options)

• 2 cups creamy almond butter

• 2 eggs ( or 2 flax eggs for vegan

• 1 cup pure maple syrup or 1 cup monk fruit sweetener

• 1 teaspoon vanilla extract

• 1 teaspoon baking powder

• 1 cup almond flour

• 1/2 cup unsweetened cocoa powder

• ¼ tsp salt

• 1/2 cup dark chocolate chips (Lily’s Chocolate for no sugar option, Enjoy Life for dairy free option)

• 5-7 cup strawberries, thinly sliced

Preheat oven to 350 degrees and grease an 8×8 baking dish well. In a large bowl, mix together almond butter, eggs, maple syrup or monk fruit, and vanilla extract until smooth. Mix in the baking powder, almond flour, cocoa powder, and salt well so there are no lumps. Fold in dark chocolate chips then add batter to baking dish. Top with sliced strawberries. Bake in oven for 32-35 minutes then slice and enjoy!

No-Bake Strawberry Cheesecake Dessert Parfaits

• 2 pounds strawberries, stemmed and sliced

• 8 ounces reduced-fat cream cheese

• 1/2 cup plain non-fat Greek yogurt

• 1 teaspoon vanilla extract

• ¼ cup Truvia, ½ cup monk fruit, or stevia to taste (or ½ cup powdered sugar)

• 1-1/2 cups TruWhip whipped topping

• 2/3 cup graham cracker crumbs

In mixing bowl, beat cream cheese, yogurt, and sweetener of choice until smooth. Gently stir in 1/2 cup whipped topping. To assemble parfaits, divide the ingredients among 8 dishes or glasses. Layer graham cracker crumbs, cream cheese filling, and strawberries. Repeat layers and end with a dollop of whipped topping.

Fruit Kabobs

• 1 pint strawberries

• 1 ½ cup grapes

• Wood skewers

Wash strawberries and grapes and remove stems.Using a knife, core the strawberries, but then also make a cut on the top to create a heart shape. Alternate strawberries and grapes on the wooden skewers.
