1 cup Ricotta

1 cup Butternut squash, roasted, cooled

3 cups radicchio

3 cups escarole

1/2 cup onion, diced

1/4 cup balsamic syrup*

2 cloves garlic, chopped

Pinch chili flake

Salt and pepper to taste

Extra virgin olive oil

Delicious bread

Crushed pistachio (2 tablespoons)

Grill the bread and set aside.

To a pan, add and sauté onion with salt and pepper. Once well roasted, add in butternut squash, chopped garlic, salt, pepper and chili flake. Sautee lightly and then add in chopped radicchio and escarole. lightly sauté.

Slather toast with ricotta and pile high with greens-butternut mixture, top with drizzle of balsamic syrup and crushed pistachio.
