PHOENIX (3TV/CBS5) -- It is getting colder in Arizona, which makes it a perfect time for some warm macaroni and cheese.

The Good Morning Arizona team made up some macaroni and cheese from the Better Homes and Gardens recipe with a special touch. 

Better Homes and Gardens four-cheese macaroni and cheese recipe:

Hands-on time: 30 minutes

Bake: 20 minutes at 350 degrees F

Ingredients:

5 1/2 dried cavatappi or corkscrew-shape pasta (16 oz.) 

1 recipe Basic White sauce (below)

2 cups  shredded Gouda cheese (8 oz)

1 cup shredded sharp cheddar cheese (4 oz)

1 cup shredded Swiss cheese (4 oz)

1/2 cup grated Parmesan cheese 

1/2 cup panko bread crumbs

1 Tbsp. butter, melted

1) Preheat oven to 350. Lightly grease a 2 1/2 to 3- qt. baking dish. Bring a large pot of lightly salted water to boiling. Add pasta and cook according to package directions. Drain and return to the warm pot.

2) Meanwhile, prepare Basic White sauce. Add Gouda, cheddar, Swiss and 1/4  cup of the Parmesan cheese to the sauce, whisking until cheeses melt and sauce is smooth. Add the cheese sauce to cooked past, stir to coat. Transfer mixture to prepared dish.

3) In a bowl, combine the panko bread crumbs, melted butter and remaining Parmesan cheese. Sprinkle panko mixture over pasta. Bake 20-25 minutes or until crumbs are golden.

Makes 6 servings (1 1/4 cups each)

Basic White Sauce:

In a 3 qt. saucepan, melt 3 Tbsp. butter over medium heat. Stir in 3 Tbsp. all purpose flour, 1/2 tsp salt and 1/2 tsp black pepper. Gradually whisk in 2 1/2 cups milk cook, whisking constantly, until thickened and bubbly. Cook and whisk 2 minutes more. remove from heat. Makes about 2 2/3 cups.

April's Monsoon Mac and Cheese

Hands-on time: 30 minutes

Bake: 20 minutes at 350 degrees F

Ingredients:

16 oz box dried penne pasta

1 recipe Basic White sauce (below)

1 cup  shredded Gouda cheese (4 oz)

1 cup shredded pepper jack cheese (4 oz)

1 cup shredded sharp cheddar cheese (4 oz)

1 cup shredded Swiss cheese (4 oz)

1/2 cup grated Parmesan cheese 

1/2 cup panko bread crumbs

1 Tbsp. butter, melted

2 small cans chopped green chiles

1) Preheat oven to 350. Lightly grease a 2 1/2 to 3- qt. baking dish. Bring a large pot of lightly salted water to boiling. Add pasta and cook according to package directions. Drain and return to the warm pot.

2) Meanwhile, prepare Basic White sauce. Add Gouda, cheddar, Swiss and 1/4  cup of the Parmesan cheese to the sauce, whisking until cheeses melt and sauce is smooth. Add the cheese sauce to cooked past, stir to coat. Add in two small cans of chopped green chiles.  Transfer mixture to prepared dish.

3) In a bowl, combine the panko bread crumbs, melted butter and remaining Parmesan cheese. Sprinkle panko mixture over pasta. Bake 20-25 minutes or until crumbs are golden.

Makes 6 servings (1 1/4 cups each)

Gina's macaroni and cheese recipe

I used the better homes and gardens recipe and added some additional items. 

My son helped me name my creation:  "Mac Daddy Huevos Rancheros"

I substituted a Mexican cheese blend for the Gouda and Swiss.

I added chorizo and a chopped green bell pepper (for the kids, I would add jalepenos for more heat.)

I topped it with a fried egg!
