PHOENIX -- Sweet potatoes are one of winter's most powerful super foods and are a great substitute for mashed potatoes and gravy, which can be loaded with fat and sodium.
4 large sweet potatoes
3 tablespoons olive oil
2 ounces 100% maple syrup
Salt & pepper to taste
Preheat oven to 400 degrees F.
Toss the sweet potatoes with olive oil and salt & pepper, coating them well.
Place them on a small sheet pan and put them in the oven for 45 to 60 minutes. They should be fully cooked. You may need an extra 15 minutes or so to be sure they are nice and caramelized.
Once cooked, place them in the refrigerator and cool completely -- overnight, if possible.
Peel skin off sweet potatoes and slice into 1 ½ inch slices.
Place a non-stick sauté pan on medium to high heat with a small amount of olive oil. Put the sweet potatoes in the pan and sear until they are golden brown and crispy. Flip the sweet potatoes and repeat the process.
Arrange on a serving dish, top off the sweet potatoes with the maple syrup, and serve.
