PHOENIX -- The heat is on in Ahwatukee this weekend as the community hosts its 9th Annual Chili Cook-off & Festival.
40 cooks from all over the United States will be competing to make the best bowl of Red Chili, Green Chili and Salsa. The first place winners in each category will earn their spot to compete in the 2013 World Championship Chili Cook-Off.
"It's gotten bigger and better every year," says Chili Cook-off Chairman Susan Hyden
Award-winning chili cook Dick Swenberger visited the set of Good Morning Arizona Thursday with some cooking tips and creative ideas.
"I love cooking green chili, because I spent about a year in Albuquerque, New Mexico," Dick told Kaley O'Kelley. "They had me eating green chili at least twice a day."
Dick certainly brings his his chili know-how to the table. He's cooked at the ICS World Championships for 18 years, and has placed 2nd in the world twice for his red chili and his green chili.
The key to making good chili, Dick says, is having quality ingredients. He uses cubed pork, green chilis, and a sauce made out of an assortment of other chilis.
Temperature is also important. "I don't want to overcook the meat and dry it out," Dick explains. "I try to stay below 200 degrees, and sit somewhere around 190. Remember, 212 is boiling and you don't want to boil it, because you boil out flavor."

Two Bands on Saturday: A Boy Named Sioux, Chuck E. Baby
Bob Plager, current World Champion in Red Chili, will be the Chief Judge for the cook-off and will also be speaking to the public regarding his world-famous chili. He will even be handing out copies of this recipe revealing his "secret" ingredient.
