Chef Gregg Piazzi talks about the restaurant's family-friendly meals and demonstrates how to make the kids' fried rice.
Kids Fried Rice
2 oz Chicken Strips
8 oz Cooked Rice
1 TB Soy Sauce
1 tsp Sugar
1 TB Chicken Broth
1.Blanch chicken in chicken stock or water until thoroughly cooked. Strain.
2. Add 1 Tb. Of oil into a sauté pan and heat until smoking.
3. Add 1 whole egg into the wok. Let it quickly 'set-up'. Then quickly stir-fry.
4. Add the cooked chicken, quickly stir-fry.
5. Add rice and stir-fry.
6.With the back of the wok ladle or spoon, pound and separate the rice kernels.
7. Add Soy Sauce, Chicken Broth and sugar. Stir-fry using high heat until all rice is coated evenly.
8.Place on a small round plate.
