How to grill fruits and vegetable for light, healthful summer meals and sides

PHOENIX -- Michelle Dudash, chef, nutritionist and author of "Clean Eating for Busy Families," shared tips on grilling fruits and vegetables with incredible spice combinations.

1. Grill vegetables with a kick
Add herbs and spices to make vegetables taste amazing. They are free of added sugar, salt and fat, and are calorie-free.

Yes, you can grill broccoli! Drizzle with olive oil and sprinkle with Italian seasoning, garlic powder and black pepper. Squeeze grilled lemons on top.

2. Grill fruits with a spicy twist
Firm or slightly under ripe fruits like peaches and pineapple hold up best on the grill. Grilling caramelizes and concentrates natural sugars in the fruit and spices add a flavor punch. Try grilled pineapple sprinkled with ginger.

To make grilled peaches: Cut 2 peaches in half, remove pits and brush with a combination of 1 Tbsp. canola oil, 1/2 teaspoon honey and 1 teaspoon cinnamon. Grill on medium heat for 2-3 minutes per side.

3. Use the right technique when grilling produce
Don't get caught with a burnt pile of mushy produce stuck to the grill. Try these tips!

  • Preheat grill to medium heat (350 degrees) for a nice, mild char on the outside and cooked al dente on the inside.
  • Be sure to scrape the char off of the grill first.
  • Lightly oil either the food or the grill with canola oil.
