RECIPE: Seared Scallops with Cauliflower

The new CIVANA Carefree Resort just underwent a multi-million dollar renovation to convert the former Carefree Resort & Conference Center into a wellness destination resort that is also open to the public for dining at their two new healthy cuisine outlets.

One of the new cuisines is the Seared Scallops with Cauliflower.

Here is the following recipe: 

Step 1
4 ounces raw cauliflower ‘rice’
2 ounces half and half
1 teaspoon butter
Pinch salt and pepper

Step 2
3 each (about 5 ounce) jumbo scallops
Salt and pepper
Drizzle of oil (for sautéing)
¾ ounce whole butter
Juice of ½ lemon

Step 3
Fried sage leaves
Grapefruit segments
Standard plate finish: drizzle Queen Creek Olive oil, pinch Maldon salt, pinch of cracked black pepper

Place ingredients in Step 1 in a small saucepot. Turn on medium heat and cook until totally dry, stirring to ensure even cooking. Remove from heat and hold hot. Preheat sauté pan for scallops. Season and sear scallops in pan. When almost done, add butter and allow to brown thoroughly. Finish with lemon juice.

Plate with cauliflower in center of plate, topping with scallops and brown butter. Garnish with grapefruit, sage and standard plate finish.
