Herbed Chicken Flour:
2 cups All Purpose flour
1 teaspoon of smoked paprika
1/2 teaspoon black pepper
1/2 teaspoon chili powder
1 tablespoon of salt
1 teaspoon onion powder
1 teaspoon granulated garlic

3 whole eggs

Whisk all ingredients for flour mixture together.
Whisk eggs together and cover the chicken breast with the egg mixture.
Thoroughly dredge chicken breast in flour mixture.

Fry chicken in a heavy bottomed skillet, about the 1/3 full of frying oil. (Canola, vegetable)

4 egg yolks
1 tablespoon lemon juice
1/2 cup melted butter
Cayenne + Salt to taste

Whisk egg yolks and lemon juice together in a bowl. Place bowl over a low-boiling, double broiler. Continue to whisk to avoid the eggs scrambling. Slowly drizzle in melted butter and whisk until the sauce has thickened and doubled in size. Add cayenne and salt

Fried Leeks:
1 cup herbed chicken flour (see above)
2 large leeks, cleaned and julienned

Allow prepared leeks to soak in buttermilk for about 2 minutes
Drain leeks from buttermilk and use a hand strainer to remove excess.
Toss leeks into flour mixture and fry until golden brown.

Poaching Your Eggs:
Fill a small sauce pan with water and 1 tablespoon of white vinegar, bring to a boil.
Bring the water down to a simmer.
Crack each egg into a measuring cup to avoid egg shells.
Carefully lower the egg into the water and cook for about 3-4 minutes.
Using a slotted spoon, remove egg from water. Season and add to any eggs Benedict of your choice
