Mac n Cheese Showdown: Scott Pasmore vs. Heather Walker

The Mac n Cheese Fest is coming to Scottsdale on October 7th, and today, it's a mac n cheese battle of the sexes! Scott Pasmore will take his simple mac n cheese recipe up against Heather Walker's NACHO Mama's mac!  We'll see who wins, and we'll talk to the folks at the mac n cheese fest to see how YOU can get your mac on October 7. 

Nacho Mama's Mac N Cheese recipe:

Prep Time: 15 minutes / Cook Time: 30 minutes / Servings: 6-8

Ingredients: 

1 lb. macaroni elbows
1 lb. Open Nature Australian Grass-Fed ground beef
1 1/2 tbsp. McCormick taco seasoning
2 cans Juanita's Nacho Cheese Sauce, medium heat (15 oz.)
1 cup half & half
16 oz. Mexican shredded cheese blend (reserve about 1/2 cup for garnish)
1 medium tomato, diced
2 tbsp. chopped fresh cilantro
2 large, chopped green onions
2 tbsp. diced jalapeños (canned or fresh)
6 corn tortillas
1 cup vegetable oil
1 tsp. kosher salt

Steps:

1.Using a large knife or pizza cutter, slice the tortillas into 1/2 " wide by 2" long strips.  Heat the oil on medium heat in a medium saucepan.  Fry the tortilla strips in batches, until golden brown.  Remove from the oil with a slotted spoon and transfer to a dish that's lined with a paper towel.  Sprinkle with salt as soon as they come out of the oil.  Set aside until ready to use.
2.Bring a large pot of heavily salted water to a boil.  Add the macaroni elbows, boil for about 7 minutes until al dente, drain and set aside.
3.Heat a large skillet to high heat. Add the grass-fed beef and season with the taco seasoning. Cook on high heat for 7-10 minutes, breaking it up as it browns and cooks through.  Remove from heat and set aside until ready to use.
4.In a medium saucepan, add the nacho cheese sauce, half & half and shredded cheese.  Heat on medium heat, stirring occasionally until the sauce is smooth, creamy and warm.
5.Add the macaroni to a very large mixing bowl.  Stir in the cheese sauce and the cooked ground beef until combined.
6.Transfer to a large serving bowl and top with additional cheese, chopped tomatoes, green onions, cilantro and diced jalapeños.  Serve immediately.

Queen of Clean: Removing Mold from Hard Surfaces

These solutions are excellent for ceilings, walls, vent covers, and really fabulous for bathroom mold on tile, grout and caulking.

First make sure you figure out the reason you are getting mold and correct the issue.

There are multiple options for mold removal solutions.

The most common is a combination of 2 tablespoons borax (Find this in the laundry aisle), ¼ cup vinegar and 2 cups hot water which will kill the mold, deodorize the air and reduce the chances of the mold returning.

Bleach is an effective mold killer and will remove any stains caused by the mold but it produces harsh fumes, can damage the materials it is used on and does not penetrate porous materials. The chlorine in the bleach stays on the surface of porous materials while the water is pulled inside, providing more dampness for the mold to feed on. Use bleach in a mixture of 1-part bleach to 10 parts waters.

Hydrogen Peroxide is a good alternative to bleach because it is safe to use and does not damage the environment. It is an anti-fungal, antiviral, antibacterial, and can remove the stains caused by mold. Spray undiluted 3% hydrogen peroxide directly on the mold.

Ammonia can be used on hard surfaces but does not work on porous surfaces such as grout. Additionally, ammonia is a harsh, toxic chemical that should never be mixed with bleach; it will produce a toxic gas. You can mix ammonia in a one to one ratio with water to use for cleaning.

Baking Soda kills mold, is safe, and deodorizes the air. It can even absorb moisture to keep the mold away. Since it kills different species of mold from vinegar, the two are often used together in mold removal solutions. Use 1 tsp baking soda with 1 cup water.

Tea Tree Oil is a natural and effective mold killing solution. It is expensive but is harmless to people and pets, anti-fungal and antibacterial and only requires a small amount. Make sure your tea tree oil comes from the Melaleuca alternifolia plant and mix 1 tsp. of the oil with 1 cup of water to create the mold killing solution.

Endurance BioBarrier™ is a safe 2 step process to remove mold and protect against it. Use the Endurance Cleaning product to clean and remove mold from surfaces. Pick Your Solution. Wear rubber gloves, eye protection if using bleach or ammonia. If using bleach, wear a mask also.

Spray the cleaning solution on the visible mold on the ceiling and walls.

Put your cleaning solution into a spray bottle and spray directly on the ceiling mold. Be careful not to spray so much that it drips on you.

Spray the cleaning solution on visible mold on tile, grout and caulking. Use this on any hard surface

Scrub the mold using the rough side of a scouring sponge. Rub back and forth to scrub the mold off.

Rinse the sponge often to prevent spread of the mold. As you use the cleaning cloth, either switch to new cloths or continually rinse out the one you're using. If you don't do this, there is a risk you'll transfer mold around the ceiling rather than remove it.

If staining remains on painted surfaces, you may need to stain-kill the area with a product like KILZ, which will prevent the stain from bleeding through the paint, and then paint.

Spray with the solution again. After removing the visible mold spray the ceiling once more to coat it in a layer of mold-killing solution. This will reduce the chances of the mold returning after a few days.

Allow the area to dry. If there are fans, turn them on. Alternatively, if it's a warm day, open the window and let the breeze in. This will help dry the surfaces and bring spores outside.

Enchantment Cooking with Executive Chef frank Desplechin 

Executive Chef Franck Desplechin from the Enchantment Resort in Sedona shows how to make a crispy skin campbell river salmon pumkin, roasted delicata squash, caramelized pecans and copper city bourbon sauce.

Recipes:
Pumpkin Puree

170 gr Pumpkin, sliced ¼" thick, skinless
690 gr Water
21 gr Sugar
12 gr Salt

Combine all and bring to a simmer. Simmer covered until Pumpkin are tender. Drain very well. Puree in vita prep until completely smooth

Caramelized Pecans

200 gr Pecans
100 gr Light Corn Syrup
5 gr Smoked Sea Salt
2 gr Smoked Paprika
2 gr All Spice, ground

Combine all in a bowl and mix well. Spread into an oven layer on a sheet tray lined with parchment paper. Bake in a 350 oven for approximatively 12 minutes, until nuts are toasted. Immediately transfer to a large mixing bowl and toss continually until nuts are separate. When totally cool, put in a completely dry container with humidity packets and keep covered until needed.

Copper City Bourbon Sauce

240 gr Copper City Bourbon
100 gr White Wine Vinegar
50 gr Shallots, minced thinly
5 gr Black Pepper, whole
150 gr Heavy Cream
450 gr COLD butter, cube
TT Salt

Cut the butter into a medium (1/2-inch) cubes and return the butter cubes to the refrigerator to keep them cold, which is very important. Heat the Bourbon, vinegar, and shallots and black pepper in a saucepan until the liquid boils, then lower the heat a bit and continue simmering until the liquid has reduced down to about 75gr. This should take about 10 minutes. Once the bourbon-vinegar mixture has reduced to 75gr, reduce the heat to low, add the cream and bring to a boil again, take the cubes of butter out of the fridge and start adding the cubes, a few at a time, to the reduction, while it is boiling still and while you whisk rapidly with a wire whisk. As the butter melts and incorporates, add more butter and keep whisking. Continue until you only have 2 to 3 cubes remaining. The finished sauce should be thick and smooth. Season to taste with salt. Have the shallots be strained out before serving.

To Serve:
1 x skin on Salmon 6oz
Pumpkin, puree
Delicta Squash, Sliced, Roasted
Pecans to be microplaned on the plate, heavily (Last Step)
Bourbon Sauce
Herbs or flower to finish

West Valley gets a new comedy club

Stir Crazy Comedy Club is opening October 5th at Westgate Entertainment Center. The club provides national-level talent, and food and drinks served at a reasonable price. The 3,080-square-foot venue seats 120 patrons in its showroom, which blends a classy lounge ambiance with a small theater experience optimized for live stand-up comedy. 

All shows are affordable as every show is $18 per person. On Thursdays, there is one show at 7 p.m. (doors at 6 p.m.). On Fridays and Saturdays, there are two shows at 7 p.m. (doors at 6 p.m.) and 9:30 p.m. (doors at 9 p.m.) and some Sundays at 7:30 p.m. (doors at 6:30 p.m.) depending on the schedule.

Make and take woodworking

Local woodworking shop lets you create and make a project all in one class.  Learn how to work with wood and create a project all in a few hours.

Rockler Woodworking and Hardware in Phoenix is offering hands-on, "Make & Take" project classes starting October 1st and ending October 27th. Participants can learn basic woodworking skills while handcrafting items they'll be proud to take home they’ll be able to build a complete project in just a few hours. Each class size is limited to as few as three participants and will cost from $25.00 to $45.00 with all materials included. No experience or tools are needed. Instruction will be provided by the store's expert woodworkers and teachers. 

The "Make & Take" class series is especially well-suited for beginners or those with limited woodworking experience. Class size is limited in order for attendees to have access to as much guidance and instruction as needed. "Make and Take" class projects include a custom knife; a wooden footstool; a custom-made, Manhattan style pen; and a beanbag toss board (Participants can use a free plan to make the second board at home, or enroll in a second class to complete the set).

Children under the age of 18 are welcome to attend but must be accompanied by a parent or guardian and must sign a waiver. Each class will last 2 to 3 hours and will focus on a single project.

Coping and battling hair loss for women

Hair loss doesn't just effect men, it also effects women. In fact, 40-percent of people with hair loss are women. Dr. Sharon Thompson joins us with the causes of hair loss, the tests and treatments available.

We hear more about hair loss in men, but 40% of people with hair loss are women 
Women have more socially acceptable ways to hide hair loss but social stigma for hair loss is greater 
Hair grows in stages. Some of your hair is in each stage every day.
Losing some hair daily is normal from 50 to 100 strands; 250 strands with washing. These hairs will grow back

Causes of hair loss
1.    Telogen Effluvium
a.    Sudden loss of lots of hair daily
b.    Health issues and medications can result in temporary hair loss
c.    You will notice dramatic increase in hair loss 1-3 months after an event
d.    Usually does not involve 100% loss (but can, such as after chemotherapy)
e.    Examples include:

  •     Pregnancy (women usually notice increased hair loss 3-4 months postpartum)
  •     Major illness (flu, ICU stay)
  •     New medication
  •     Other medical diagnoses (decreased thyroid function, poor nutrition, increased androgens, psoriasis)

f.    This hair loss is usually temporary and/or reversible when the cause is removed
2.    Androgenetic alopecia, or female pattern baldness, is the most common form of hair loss in women. 
a.    Genetic
b.    The most common type of hair loss
c.    Occurs gradually 
d.    Most women will experience thinning of the crown of head or thinning ponytail, hairline usually preserved
e.    Affects about 30 million American women 
f.    Mostly occurs in the late 50s or 60s, it can happen at any time, even during teenage years
3.    Immune/Inflammation
a.    Increased immune cells in scalp damage hair follicles
b.    Requires treatment by a dermatologist 
4.    Traction alopecia 
a.    Hair styles that pull or put hair on tension can lead to temporary or permanent hair loss
Tests
1.    Most hair loss is genetic and does not require lab tests
a.    If you have physical symptoms (rash, irregular periods etc.), lab tests may be right for you 
2.    Specialized tests
a.    Scalp biopsy can be used to refine diagnosis in cases of inflammatory hair loss a small section of scalp is removed and examined under a microscope to help determine the cause of hair loss.
b.    Hair pull: The hair pull test is a simple diagnostic test in where the physician lightly pulls a small amount of hair to determine if there is excessive loss 
c.    Densitometry: The densitometer is a handheld magnification device that is used to check for miniaturization of the hair shaft 

Treatment
1.    Shampoos, conditioners, can fullness to increase the appearance of fullness but cannot stop or reverse hair loss
a.    You have to use trial and error to find which of these products will give your results
2.    There is no evidence that expensive serums and oral vitamins have any effect.
3.    Currently there is only one FDA approved treatment for female pattern hair loss. 
a.    Minoxidil 2% Topical Treatment now available over the counter
4.    There are other medications available by prescription, but your health care provider will let you know if one is right for you.
5.    Hair replacement
a.    Extensions/wigs
b.    Hair transplant
