Restaurant Week: Talavera at Four Seasons Resort Scottsdale at Troon North

Chef Sam Sanz of Four Seasons cooks up a dish featured for Arizona Restaurant Week.

Chef Samantha Sanz is at the helm at Talavera, bringing her unique spin to the steak and seafood concept with inspired vegan dishes, influences from her Mexican roots and European touches from her travels abroad.

Tips for perfect fish preparation:

  • To cook fish, it is very important to have a good sauté pan it can be a cast iron or a non-stick pan. The fish needs to be patted dry well on both sides and season just before it is placed in the sauté pan.
  • Use grape seed or blended oil to cook fish, as they have a higher smoking point than olive oil.
  • Press the fish really well with a fish spatula to prevent the fish from curling and achieve that perfect crispy skin.
  • When done, the fish should look golden brown from the outer corners of the skin. Be careful not to overcook, as it is very delicate and flaky.

Talavera will participate in Arizona Restaurant Week, September 15-24, 2017, and will present a three-course menu for $44.
