2 cups fresh basil 3 cloves roasted Garlic 1/2 cup roasted pine nuts 1 tablespoon balsamic vinegar 1 tablespoon fresh squeezed lemon juice 1/2 teaspoon fresh grated lemon zest 1/2 teaspoon salt 1/2 teaspoon pepper 1 cup grated pecorino cheese 2/3 cup extra virgin olive oil
In a food processor, start by grinding roasted pine nuts for about 10 seconds until fine. Then add pecorino cheese and pulse for 10 seconds until nuts and cheese are well blended. Next add fresh basil leaves, roasted garlic, balsamic vinegar, lemon juice, lemon zest, salt, pepper, and extra virgin olive oil. Blend for about two minutes until nice and smooth.
