Cowboy Ribeye with Slow Cooked Peppers, Citrus Salad w/Tuna and Cotton Candy Panna Cotta


Virtù Cowboy Ribeye with slow cooked peppers

Yield: for 2

For the peppers    
6 Italian long sweet peppers or hatch chiles or similar
2 tablespoons thinly sliced garlic
¼ cup olive oil
Salt and pepper to taste

For the ribeye
1 36 ounce cowboy ribeye
2 tablespoons olive oil
1 head garlic split
¼ cup butter
1 bunch thyme
Salt and pepper to taste

Procedure for the peppers
Line up peppers in a baking dish. Toss in garlic, salt and pepper and drizzle olive oil. Place in a 250 degree oven until peppers soften.

Procedure for the ribeye
Remove the steak from your fridge 30 minutes before cooking to come down to room temperature. Season the steak liberally with salt and pepper. In a hot cast iron skillet, sear the steak on both sides. Add the butter, thyme and garlic and baste the steak turning a couple of times until desired temperature. 130 degrees for medium rare. Remove steak from pan and let rest at least 5 minutes before slicing.

Procedure for the plate up
Arrange peppers on a platter, slice the steak and place next to peppers. Drizzle with olive oil and sea salt.

Virtù Citrus Salad w/tuna

Yield: 4

For the salad    
1 ruby red grapefruit (segmented)
1 lisbon lemon (segmented)
1 naval orange (segmented)
1 tangelo (segmented)
1 fennel bulb sliced thin
1 small red onion sliced thin
1 teaspoon honey
2 tablespoons chopped marcona almonds
2 teaspoons torn mint leaves
¼ cup extra virgin olive oil
Salt and pepper to taste

For the tuna
2 6oz portions of tuna
2 tablespoons olive oil
1 teaspoon brown sugar
2 teaspoons ancho chile powder
½ teaspoon salt 

Procedure for the salad
When segmenting the citrus, reserve all the excess juice. In a mixing bowl combine the citrus, fennel, onion, almonds and mint. In another mixing bowl whisk together the excess citrus juice and honey. Once combined, slowly drizzle in the olive oil to make a dressing. Season with salt and pepper.

Procedure for the tuna
Mix the brown sugar, chile powder and salt. Season the tuna with this mixture and sear over high heat for 20 seconds on each side. 

Procedure for the plate up
On your choice of plate arrange the salad in the center of the plate. Slice the tuna and place around the salad. Drizzle the dressing on and around the tuna. Bon Appetit!

Virtù Cotton Candy Panna Cotta

Yield: 8 mason jars

1 pint strawberries stemmed and quartered
2 cups granulated sugar
2 cups heavy cream
1 cup milk

In a small pot combine the sugar and strawberries. Cook until a strawberry syrup forms and strawberries become soft, approximately 5 minutes.
In another pot bring the cream and milk to a scald. Puree the strawberries in a blender and add to the cream milk mixture. Bloom 12 gelatin sheets in ice water. Squeeze water out of gelatin sheets and whisk into strawberry cream mix until gelatin is completely dissolved. Pour mix into mason jars and refrigerate until firm.

Procedure for the plate up
You can serve as is or add some soft whipped cream to the top and a fresh strawberry for garnish.
