Celebrate National Bowling Day at Uptown Alley

Talking Stick Resort hosts 13th Annual Arizona State Poker Championship

The Arizona State Poker Championship at Talking Stick Resort will be kicking off this morning at 9 a.m. The No Limit Hold'em tournament, is in its 13th year, draws huge crowds and has a prize pool of more than $1 million. 

Upon entry, players will receive $16,000 in tournament chips with their $1,100 buy-in. They can also buy an additional $10,000 in chips for $30. Tournament play will be broken into three days beginning at 9 a.m. on Friday, Aug. 11, 9 a.m. on Saturday, Aug. 12 and 9 a.m. on Sunday, Aug. 13. Participants eliminated in the first three days of play can reenter.  

The semi-final tables will begin at 9 a.m. on Monday, Aug. 14 and will continue until 10 players are left. The remaining 10 players will be in the finals starting at 10 a.m. on Tuesday, Aug. 15 and continue until a new champion is crowned. The winner will receive $196,750, a Rolex and a trophy, while second and third place will receive $143,000 and a trophy and $110,000 and a trophy, respectively. However, final prize amounts will be based on the number of entrants.

Beyond the poker action and prizes, The ARENA Poker Room will keep players full and energetic by offering a special menu 11 a.m. to 11 p.m. each day. Among the array of dishes available for $9 include Fish Tacos, BBQ Pork Sliders, Portabella Mushroom Burger and more.

Smitty's collectibles being auctioned in the Valley 

If you've traveled through Mayer, Arizona, you've probably visited Smitty's Antiques Museum, it's a popular Arizona landmark, with an iconic sign you can see from the road. But, after recurring floods in the high country, this eclectic and famous museum has had to close up shop. Now, EJ's Auction & Consignment in Glendale will begin auctioning off an estimated 30,000+ items from Smitty's during its weekly Saturday auctions starting on Sat, Aug 12.

Recipe: Blackened Battered Fish Tacos
Prep Time: 15 minutes / Cook Time: 20 minutes / Servings: 12 tacos
Ingredients:

  •         12 corn tortillas
  •         3 tilapia or cod fillets, cut into 1" x 3" strips
  •         1 cup flour
  •         2 1/2 cups biscuit mix
  •         2 tbsp. blackened seasoning
  •         32 oz. vegetable or peanut oil
  •         3 cups pre-mixed broccoli slaw
  •         3 tbsp. chopped red onion
  •         3 tbsp. chopped tomato
  •         3 tbsp. white wine vinegar
  •         12 oz. bottle of Cacique chipotle sour cream
  •         salt/pepper

Steps:
For the Slaw:
    1    Combine the broccoli slaw, tomato, red onion and white wine vinegar.  Season with 1/4 tsp. each salt and pepper.  Set aside until ready to use.

For the Fish:
    1    Heat the oil in a large pot or frying pan to 375 degrees.
    2    In a large mixing bowl, combine the biscuit mix and 1 tbsp. of the blackened seasoning.  Season with 1/4 tsp. each salt and pepper.  Whisk to combine.
    3    Add 1 1/2 cups of water and stir until it forms a fairly loose batter.
    4    Prepare the fish by patting it dry with a paper towel and dredging it through the flour.  Shake off excess.
    5    Dip a few pieces of the fish in the batter and place them into the hot oil.  Fry for 3-4 minutes, until golden.  Remove from the oil and place onto a plate that's been lined with a paper towel.  Repeat with the remaining pieces of fish until all are cooked.  Sprinkle the remaining 2 tbsp. of blackened seasoning and an additional 1/4 tsp. salt onto the cooked fish and toss them until all the pieces of fish are coated with the seasoning.

To Build the Tacos:
    1    Heat the corn tortillas in the microwave for about 1 minute and allow them to steam for 2-3 minutes in the microwave before removing them.
    2    Lay the tortillas out and place 1-2 pieces of fish into the center of each of the tortillas.  Spoon about 1/4 cup of the slaw on top of the fish pieces.
    3    Squirt about 1 tbsp. of the chipotle sour cream on top of the slaw and serve immediately.  Makes 12 tacos.

Recipe: Bacon Guacamole Takedown Tacos
Prep Time: 20 minutes / Cook Time: 4 hours / Servings: 12 tacos

For the Chicken: 
Ingredients:

  •         3 large chicken breasts
  •         2 tbsp. vegetable oil
  •         1/2 large green pepper, seeded and chopped
  •         1 large poblano pepper, seeded and chopped
  •         1/4 red onion, chopped
  •         28 oz. can mild green enchilada sauce
  •         salt and pepper

Steps:
    1    Heat the oil to high heat in a large skillet.  Add the chicken and season with salt and pepper.  Sear the chicken on both sides for 3-4 minutes, until golden.  Transfer the chicken to a crock pot.  Add 1 cup of water to the hot skillet, deglaze the pan and add the drippings to the crock pot.
    2    Add the green pepper, poblano pepper, red onion and enchilada sauce to the crock pot. Stir to combine, cover the crock pot and cook on high heat for about 3 1/2 hours.  
    3    Uncover the crock pot, shred the chicken with a fork, re-cover, and allow it to finish cooking for another 30 minutes.

For the Guacamole
Ingredients:

  •         4 large avocados, peeled, seeded and chopped
  •         1/2 large tomato, chopped
  •         2 tbsp. chopped fresh cilantro
  •         1/4 tbsp. chopped red onion
  •         juice of 1 lime
  •         1 clove garlic, minced or pressed
  •         12 sliced of thick, center cut bacon, chopped
  •         salt and pepper

Steps:

    1    In a large mixing bowl, combine the avocado, chopped tomato, red onion, cilantro, lime juice and minced garlic.  Season with salt and pepper to taste and stir to combine.  Set aside until ready to use.
    2    Heat a large skillet to high heat.  Add the chopped bacon and cook on high heat for 7-10 minutes, until the bacon is browned and crispy.  Remove from the grease with a slotted spoon and transfer to a plate that's been lined with a paper towel.  Set aside until ready to use.

To Build the Tacos:
Ingredients:

  •         12 hard taco shells
  •         1 recipe braised green chili chicken
  •         1 recipe loaded guacamole
  •         2 cups shredded Mexican cheese
  •         12 slices chopped, crispy bacon

Steps:
    1    Place the hard taco shells on a serving platter.  Use a slotted spoon to drain the liquid from the chicken before spreading about 1/4 cup of the chicken into each of the hard taco shells. 
    2    Sprinkle about 2 tbsp. of the shredded cheese on top of the chicken.
    3    Spread about 2 tbsp. of the guacamole on top of the cheese.
    4    Sprinkle the bacon evenly on top of the guacamole and serve immediately.
