Traditional French Crepes & Chocolate Crepes

Traditional French Crepes

2 1/2 cups sifted all purpose flour
4 eggs
3 1/2 cups whole milk
2 ounces melted butter 
1 ounce vegetable oil (not evoo) 
2 TBSP sugar
1 tsp salt

All ingredients should be at room temperature.
in bowl, combine eggs, salt and sugar.  Add 1/2 of the milk and combine.  Add sifted flour to mixture and whisk to remove lumps.  Add other half of milk and whisk.  Whisk in oil and butter.  Strain through fine sieve.  
Allow to rest at least 2 hours in refrigerator or preferably overnight.
Will keep for 3 days in refrigerator.
Allow 30 minutes at room temperature before using.  


Chocolate Crepes

1 1/3 cup all purpose flour
1/4 cup cocoa powder
3 TBSP sugar
4 eggs
2 cups whole milk
2 ounces melted butter
1/3 cup buttermilk
pinch of salt

Sift together flour and cocoa powder.  
In large bowl, combine eggs, sugar and salt.  Add whole milk and whisk.  Add sifted flour and cocoa powder and whisk to remove lumps.  Add melted butter and buttermilk.  Whisk and strain through fine sieve.
Allow to rest at least 2 hours or preferably overnight in refrigerator.
Will keep for 3 days in refrigerator.
