Chef Dad's Crockpot Beef Stroganoff

    1 ½ - 2 lbs. Boneless Tri-tip or Sirloin Beef Steak (cut in ½" strips) 
    6 oz. Crimini (baby bella) Mushrooms (sliced)
    1 Onion (sliced in half moon strips)
    2 Tbsp. Worcester Sauce
    2 Tbsp. Dijon Mustard
    4 Tbsp. Butter
    Salt & Pepper
    1 Can of Cream of Mushroom Soup
    1 Cup (8 oz.) Sour cream
    4 oz. Cream Cheese (1/2 box, softened)
    1 lb. bag of Large Egg Noodles or 2 "boil in bag" white rice
    Chopped Parsley for Garnish

1) In a large bowl, put your sliced beef in it then sprinkle with 2 teaspoons of salt and 1 teaspoon of black pepper.  Toss to combine then set aside.
2) In a large saucepan over medium heat, melt your butter then add the mushrooms & onion plus a few pinches of salt & pepper.  Fry these veggies for about 5 minutes then add your seasoned beef.  Cook another 5 minutes then add the can of soup, Dijon mustard and Worchester sauce.  Turn off heat and stir until well combined.  Move ingredients into your crockpot on low temperature then cover.  Cook 5-6 hours then add your sour cream and cream cheese.  Stir a few times and increase temp to medium heat while you cook the noodles or rice.
3) Serve over the noodles or rice then sprinkle with chopped parsley.

Cooks Note: It's ok to leave the brick of sour cream out for several hours so it softens as long as the package remains air tight. You can use half of it then wrap up the rest and put back in the fridge for use later. When adding sour cream & cream cheese to the crockpot, you'll notice it clumping up slightly. Don't panic. Simply keep stirring it in until it blends in completely.
