Arizona students compete to colonize Mars' Moon

It's the "Honeywell Fiesta Bowl Aerospace Challenge," the largest extracurricular STEM program in Arizona for grade school and junior high students. Nearly 300 teams will compete in this "science fair" style competition, presenting scale models in front of judges, as well as their reports on an international logistics mission to colonize Phobos, a moon of Mars. Each day, two teams will advance to the finals. The winning presentation will get one week free at Space Camp.

Western Week- City of Scottsdale

Parada del Sol Parade & Trail's End Festival: As Western Week comes to a close, locals and visitors can look forward to the Parada del Sol Parade & Trail's End Festival on February 11. The parade runs from 10:00 a.m.-noon. embarking from Drinkwater Boulevard south down Scottsdale Road, turning east on Second Street

Romeo & Juliet

Fellowship Square Phoenix residents Betty, who's 82, and Evogene, who's 81 are getting ready to compete in the Senior Fitness Challenge. They are both doing the obstacle course, and then Betty is also doing the basketball bounce, and Evogene is also doing the 12-mile race.

Joanie Simon Makes Crunchy Granola Cups on Good Morning Arizona

Healthy, tasty treat, like Grandma used to make- but with a twist. Joanie Simon demonstrates her take on the Crunchy Granola Cup anyone would love. 

Crunchy Granola Cups

½ cup of raw or brown sugar
½ teaspoon sea salt or plain salt
½ cup of canola oil
¼ cup of water
½ teaspoon of almond flavor
2 cups of regular oats
1.5 cups wheat flakes (Wheaties)
½ cup of wheat germ (can sub ½ cup of nuts or sunflower seeds)
½ cup of coconut
2 Tbsp. chia seeds

Combine sugar, water, oil, salt and almond extract into a bowl and mix until the sugar is somewhat dissolved.
Add in oats, wheat germ, wheat flakes, coconut, and chia seeds and mix with the liquid until fully covered.
Separate the wet granola into 12 standard muffin cups, pressing the mixture up to the sides to make a well in each cup.
Bake at 200F for 1.5 to 2 hours.
Remove the cups carefully from the tin once they've cooled. They are rather delicate.
Load up each one with your favorite yogurt and fruit toppings. Serve immediately as the yogurt will cause the granola cup to soften.

Valentine's Day Sugar Cookies

¾ cup shortening (or part butter and shortening), softened
1 cup sugar
2 eggs
1 tsp vanilla
2½ cups all-purpose flour
1 tsp baking powder
1 tsp salt

Mix shortening, eggs, sugar and flavoring thoroughly. Next, blend in flour, baking powder and salt and cover the bowl, placing in the fridge to chill 1 hour.
Heat oven to 400F. Roll dough to a ½ inch thick on a lightly floured work surface. Cut into shapes and place on ungreased baking sheet.
Bake 6 to 8 minutes until very light brown. Move to a cooling rack and wait to decorate until fully cooled.

Easy Hard Icing Glaze

2 cups powdered sugar (sifted)
2 Tbsp. milk
2 Tbsp. light corn syrup
additional milk
optional lemon extract

Sift powdered sugar into a large bowl
Add in 2 Tbsp. milk and 2 Tbsp. light corn syrup and mix until smooth, adding in 1 tsp at a time of milk until desired consistency is reached.
Lemon extract can be added for flavor.
Spread onto cookies, make sure to keep it a thin layer, otherwise it will not fully harden when it dries.
