The event is free, but those who registered will be entered into a drawing for an IPad Pro. There also will be one raffle for four one-way tickets on Southwest Airlines. Tickets are $5 each and all proceeds will go to the UA College of Medicine Phoenix Summer Scrubs program, which gives underserved youth a chance to learn about medical school.

Goat's Milk Ricotta Cheese on Toast with Citrus and Hazelnuts 
Winter recipes can be too heavy for Arizona's mild climate. This goat's milk ricotta and grapefruit toast utilizes bright Arizona grapefruit, rustic grain bread, local goat's milk and the rarely used celery leaves to make a hearty, yet refreshing dish. 
For the Goat's milk ricotta: 
* 1 c. heavy cream 
* 3 c. goat's milk 
* 1 ½ c. buttermilk 
* Pinch of salt 
* In a medium sauce pan, combine the three types of milk and the salt and let it come to a soft simmer over medium heat 
* Let the milk simmer for 2-3 min. until milk solids appear and they create what looks like a raft 
* Turn off the heat and let the mix cool on the stove for 30 minutes 
* Strain the mixture slowly and gently into a chinois or china cap with a cheese cloth 
* Let it cool in the fridge for at least 2 hours 
* Discard the liquid and the ricotta is ready to enjoy 
For the toast: 
* I loaf artisan rustic bread 
* 1 ripe grapefruit 
* ¼ c. roasted hazelnuts 
* Handful celery leaves 
* 1 tsp honey 
* Queen Creek Olive Oil to taste 
* Sea salt to taste 
* Black pepper to taste 
* Preheat oven to 400 degrees 
* Cut bread into thick slices and dab it with olive oil and salt 
* Toast in the oven at 400 for about 7-10 minutes. It should be crunchy, but still soft in the middle 
* Spread toast with a generous amount of goat's milk ricotta 
* Sprinkle with black pepper 
* Cut the grapefruit into supremes (use a knife to carefully remove the peel to reveal the bright, ripe fruit segments and cut between each segment) 
* Place grapefruit segments into a bowl with the celery leaves and toss with olive oil and sea salt to taste 
* Place the grapefruit salad on top of the toast 
* Garnish with honey, roasted hazelnuts and olive oil
