Mahi en Papillote for an easy weeknight dinner
"En Papillote" is simply a method of cooking where you seal something inside parchment paper and cook it with steam and indirect heat.
Blood Orange Mahi en Papillote (http://joaniesimon.com/blood-orange-mahi-en-papillote/)
8 oz. mahi
2 blood orange
½ red onion (1/4 sliced, Â¼ diced)
½ cup cilantro, divided
3 Tbsp. oil
salt and pepper
2 tsp garlic chile paste
Preheat oven to 375F.
Place a piece of parchment paper on a clean work surface and place several slices of red onion in the center, then top with one 4 oz. piece of mahi.
Glaze the top of the mahi with 1 tsp garlic chile paste, season with salt and pepper and a drizzle of 1 tsp of oil, then top with 1 Tbsp. cilantro and 2 slices of blood orange.
Roll up the sides of the paper so as to create a sealed pocket around the fish. Repeat with another piece of fish.
Dice up remaining orange, onion, and cilantro and add in remaining oil and some salt and pepper to taste and place in a small bowl as a salsa.
Place the parchment wrapped mahi in the oven at 375F for 8 minutes, then remove from paper and serve, topped with salsa.

One-Skillet Lemon Chicken
This one-skillet dish handles both the main course, but also a side since it's made with potatoes.
Preserved Lemon Chicken Skillet (http://joaniesimon.com/preserved-lemon-chicken-skillet)
1 lb. boneless skinless chicken breasts
2 tbsp. oil
1/2 cup fresh lemon juice
2 Tbsp. minced preserved lemon
1/2 cup Broth
1 clove garlic diced
2 tsp fresh thyme
8 oz. halved small golden potatoes or red potatoes
1/2 tsp salt
1/2 tsp pepper
1/4 cup Heavy cream
1/4 cup diced pimentos
Sear chicken in a heated cast iron skillet over medium high in 2 Tbsp. oil until browned, turn and brown the other side, then put in a separate container on the side.
Heat oven to 375F
Add 1/2 cup lemon juice to deglaze the pan and add in minced rind, broth, thyme, garlic and potatoes and simmer over medium heat until the liquid reduces by half (10 mins).
Nestle chicken in the potatoes in the juice, season with salt and pepper, scatter the pimentos and pour over the cream.
Place skillet in the oven at 375F for 10 to 15 minutes until the potatoes are browned on top and the chicken registers 175F.

Breaking Ground Dance Festival
The festival includes performances of 22 dancers on the main stage of Tempe Center for the Arts. During intermission, local Arizona dancers will participate in the popular "tiny dances" in which dancers perform on small 4 foot by 4 foot platforms, located all over the Arts Center.

5-percent raises and opting out of standardized testing proposed for Arizona Education
At 2 p.m. yesterday, State Superintendent of Public Instruction, Diane Douglas addressed the House Education Committee, telling lawmakers that we are "at a crossroads" academically and financially, and that we are still in need of improvement. She has long advocated for more school funding, and in her "State of Education" speech, she outlines a need for 5-percent raises across the board, and new legislation that would allow parents to legally "opt out" of standardized testing.
