New treatment for chronic pain sufferers

The FDA has recently approved the St. Jude Medical Axium Neurostimulator System for patients suffering from lifelong chronic pain. According to Dr. Minesh Zaveri, of St. Luke's Medical Center, it's proving to be especially beneficial for those who have tried everything. The treatment allows a patient to control their own "dosages" of electrical stimulation and manage their own pain level with the touch of a button.

Everything but the bird

Every day this week, we'll be featuring a different Thanksgiving side dish from some of the Valley's most iconic hotels and establishments. Today we're learning how to whip up pumpkin risotto with Exec. Chef Anthony DeMuro of a Different Pointe of View at Pointe Hilton Tapatio Cliffs Resort. 

Roasted Pumpkin & Parmesan Risotto
Ingredients:

  •     6 tablespoons unsalted whole butter
  •     1 medium onion chopped fine
  •     2 cups Arborio rice
  •     6 cups Pumpkin stock
  •     1 cup roasted pumpkin rough chopped
  •     1 cup dry sherry wine
  •     6 oz. grated Parmesan 
  •     Coarse salt and freshly ground pepper to taste

Preparation:
1. In a medium saucepan, bring the pumpkin stock to a simmer and keep simmering over low heat.
2. In a separate medium saucepan, melt 2 tablespoons of the butter over medium heat. Add the onions and cook, stirring with a wooden spoon, until the onion is transparent, about 5 minutes. Add the rice and cook, stirring, until it is well coated with the butter and starts to turn translucent, add half of the roasted pumpkin and stir well about 2 minutes. Add the sherry and 1 cup of pumpkin stock and simmer gently until all the liquid is absorbed, 3 to 5 minutes.
3. Ladle 1/2 cup of the hot pumpkin stock into the rice mixture and simmer, stirring occasionally, until the broth is absorbed. Repeat, adding 1/2 cup of broth at a time, until the rice is cooked through but still firm, 15 to 20 minutes’ total.
4. Add the remaining butter the rest of the pumpkin, salt, pepper, and the Parmesan. Stir to incorporate. Adjust seasoning with more salt to taste. Serve immediately, topping with additional Parmesan

Roasted pumpkin stock 
1. One medium to small pumpkin cut into 6 pieces remove seeds and pulp
2. Toss with olive oil and S&P
3. Place in a 400-degree oven and roast till nicely browned and fully cooked.
4. let cool the remove the skin 
5. rough chop 1 cup of the pumpkin and save it for the risotto
6. Take the rest of the pumpkin and place it in a small stock pot and add 8 cups of chicken stock let simmer for 2 hours then strain, then reduce to about 6 cups and then you can start the risotto
