Celery Root and White Truffle Salad
Serves 2

1 large celery root, peeled
1/2 cup baby arugula leaves
1/2 cup mache lettuce (may substitute baby greens)
1/4 cup inner leaves of celery stalks
3 ounces extra virgin olive oil
1/4 cup fresh lemon juice, seeds strained out
1 gram shaved white truffle
1/4 cup shaved Parmesan 

1. Preheat oven to 300.
2. Using a vegetable peeler, shave 3 T celery root shavings. Toss gently in a small amount of olive oil, season with salt, and roast for about 35 minutes, until tender.
3. Combine 3 ounces olive oil with lemon juice. 
4. Toss roasted celery root and lettuces with lemon oil.
5. Top with shaved truffle and Parmesan
