Toasted Pumpkin Seed and Avocado Salsa 
Serves: 4
Prep Time: 10-minutes
Cook Time: 0

Ingredients:
1 avocado, peeled, seeded and large diced 
1 grapefruit, peeled and segmented 
¼ cup toasted pumpkin seeds
¼ cup cotija cheese, crumbled 
2 Tablespoons extra virgin olive oil
1 teaspoon kosher salt 
2 teaspoons freshly cracked black pepper
1 serrano pepper, thinly sliced 

Procedure:
In a large bowl, gently fold together the all of ingredients for the salsa.  Allow to chill for at least 20-minutes in the refrigerator. 

Difficulty: Easy

Grilled Cilantro Chicken
Serves: 4 
Prep Time:  30-minutes for marinade 
Cook Time: 8 to 10-minutes 

Ingredients:
1 cup extra virgin olive oil
4 grated cloves garlic 
1/2 lemon, juiced and zested 
2 teaspoons kosher salt 
2 tablespoons freshly cracked black pepper 
1 pound chicken breast, butterflied 

Procedure: 
In a shallow dish, combine all of the marinade ingredients together and liberally rub the chicken tenderloins into the flavorful goodness. Marinate in the fridge for one hour. Remove the tenderloins from the marinade and shake off the excess.  
Heat a cast-iron Grill pan to medium high heat. Grill the butterflied chicken breasts in the pan for 3-4 minutes on each side until fully cooked to an internal temperature of 165°F.

Difficulty: Easy
