Dinning in the Dark

Dining in the Dark! It's a great charity dinner event at Crust being held tomorrow, Tuesday April 26th in an effort to provide the community a way of experiencing a meal while relying on their other four senses, the way a visually impaired person would. There's an added sensory experience to the way in which we enjoy a meal when we cannot see the presentation of the dish. Proceeds from Dining in the Dark will benefit Arizona Center for the Blind and Visually Impaired (ACBVI). Tickets for Dining in the Dark are $65++ per person. Reservations are required and space is limited. 

Delicately crafted to enhance the sensory experience, Crust staff and special guests from the Arizona Center for the Blind will help guide guests through a four course dinner including:

Course I
Roasted Beets Salad goat cheese, walnut pesto, garlic honey ciabatta, paired with Sauvignon Blanc
Wine notes: exploding with flavor! Intense and vividly focused, with plenty of fruit and herb flavors.

Course II
Crab and Pineapple mousse on endive spears with candied jalapeno and insalata prezzemolo, paired with 2014 Chardonnay
Wine notes: opens with an inviting tropical fruit-like bouquet and aromas of kiwi, banana, and summer stone fruits (apricot and white peach) a slight hint of toasted oak on the finish.

Course III
Short Rib Ravioli wild mushroom ragu, crispy shallots, paired with Rapture Cabernet

No Pork Left Behind

Executive Chef Jeremy Pacheco of LON's at the Hermosa recently unveiled a new seasonal menu for the iconic Valley restaurant at The Hermosa Inn. While guest favorites, such as the Himalayan Salt Seared Ahi Tuna and the Roasted Maple Leaf Duck, remain on the menu. Pacheco utilized a variety of new ingredients and techniques chief among them using his focus on sustainability to create pork 10+ ways. "The new menu encapsulates my favorite ingredients of the season from some of my go--to local farmers and purveyors, such as McClendon Select, Noble Breads and Crow's Dairy," said Executive Chef Jeremy Pacheco.

Also new to the menu is Pacheco's usage of an entire pig each week from AZ Fine Swine, divided amongst a variety of dishes -something not currently done by any other chef in the state.

Below lists how each portion will be utilized amongst LON's various menus:
