Water Safety: City of Peoria
Swimming is an important life skill that everyone should learn early on, so this is why the city of Peoria is offering lessons before summer begins. The first spring session for swim lessons begins March 19. Registration begins Wednesday, March 9 and Thursday, March 10. There are four sessions that will run through May 15. Classes are available from infants to age five. Dive Prep and swim team prep are also being offered.

Kids Kick Butts Day
Kids in Arizona will stand up to Big Tobacco on March 16 as they join thousands of young people nationwide for Kick Butts Day. More than 1,000 events are planned across the United States and around the world for this annual day of youth activism, sponsored by the Campaign for Tobacco-Free Kids.

Job Growth in the Valley and tips for your cover letter when it comes to landing your next job
Overall the outlook for job growth in 2016 is very positive. The latest unemployment numbers for Arizona were reported for January '16 and show a decline to 5.6% from 6.4% one year earlier. We are experiencing several corporations moving significant operations and/or headquarters to Phoenix from other parts of the country. That is bringing a significant amount of new jobs to the metro-Phoenix area. Companies are increasingly realizing the potential of Phoenix as a business-friendly metropolitan area. I think we will see this growth continue and accelerate.
There are also companies that are growing organically either on their own or through organizations like Scottsdale Innovation Center, CO+HOOTS, etc. Those are creating new and exciting employment opportunities in this great city.
Cover letters may be the most important part of a job seekers documents, but also the most overlooked. In fact, in today's digital world, many are skipping the cover letter all together. This can be a big mistake. Not paying enough attention to your cover letter could be the only thing standing between you and that interview. Here are useful tips:
1. Be specific to the job and company.
2. Understand the industry.
3. Request an interview.
4. Avoid buzz words.
5. Use keywords.
6. Edit and proofread before sending.
Also, a critical point to make is the importance of having someone be an advocate for you while going through a job search. Statistics show the vast majority of jobs are not filled by online postings but through other sources. If a particular job looks interesting find the best connection you have to the hiring authority.

Ling & Louie's Asian Bar and Grill Celebrates National Noodle Month with Limited Time Menu
Scottsdale-based Asian Bar and Grill, Ling & Louie's, announced its latest specialty menu in celebration of National Noodle Month in March. The menu will be introduced on the first of March and will available at Ling & Louie's Chandler, Scottsdale, Boise and Dallas locations through the end of the month.
The menu includes dishes that focus on highlighting the East-Meets-West heritage of the restaurant through a variety of noodle dishes. Among some of the highlighted creations on the menu are Green Curry Mac & Cheese, a one-of-a-kind combination of classic American and Southeast Asian flavors and The Crying Dragon, a spicy dish with udon noodles, beef, mushrooms and a mix of chilies.
Some other dishes guests can enjoy during the month of March are their light and flavorful Shrimp & Mango Salad, the Beijing Duck Noodles, Garlic Pepper Noodles and the Ginger-Sake Soba Noodles.
Like every one of Ling & Louie's specialty dish menus, each of the items in this noodle ensemble is crafted especially to give guests, old and new, a taste of the restaurant's Asian fusion and American comfort union.
Green Curry Mac N Cheese
Chicken Breast: 2- 6 oz. breasts
Canola oil: 2 fl. oz.
Sharp Cheddar Cheese: 5 oz. wt.
Green Curry Paste: 2 oz. wt.
Coconut Milk: 2 cups
Half & Half: ½ cup
Kosher Salt: ½ tsp.
Flour: 1/3 cup
Large Elbow Pasta: 2 lb. wt.
Parmesan Cheese: ¼ cup
Panko Bread Crumbs: ¼ cup
Thai Basil: 3 Tbsp.
Roasted Red Bell Peppers: 4 oz.
1. Boil water in a stock pot and season water
with salt & oil. Add the pasta and cook
until al dente, and remove pasta from
water and hold.
2. Dice the chicken breasts into1/2" pieces
and season with salt & pepper to taste.
3. Using a heated sauté pan, add oil and
cook chicken until done, but still moist
and hold warm.

Love your Lemons
Citrus season is in full swing and it's nearly impossible to use an entire tree's worth of lemon, grapefruit or oranges. Pauline Martinez from Perk Eatery has some interesting and different suggestions on how to love those lemons (and other citrus)
Preserved Citrus (making it at home)
And using it in one of these recipes:
Moroccon Chickpeas with Feta and Preserved Lemon
Persian Cucumber and Tomato salad with Preserved Lemon
Israeli Couscous with roasted fennel, preserved grapefruit and avocado
2 lbs. Fresh picked citrus fruit
1 cup Sea Salt (high quality)
1 tsp peppercorns
1. Wash the citrus well, scrub to make sure all sediment is gone. Trim away the stem end and slice into six segments per piece of fruit.
2. Disburse the peppercorns into large, wide mouth jars (choose jars that can hold at least 24 ounces).
3. Pour 2 tablespoons of salt into the bottom of the jars and pack in the first six slices of fruit. Top with salt and then more citrus fruit and continue to alternate until the jars are filled. To fill any open air cavities, fill jars with fresh squeezed juice from citrus.
4. Place the tight-fitting lids on to the jars and shake.
5. Let jars sit in a cool, dark place for 2-3 weeks.
6. Shake the jars daily distribute the salt and liquid.
7. Open the lid every few days, to allow the lemons to breathe and to release any fermentation pressure.
8. Once the skins look soft and liquid has taken on a tangy taste, put the jar in the fridge. They will keep up to a year.
Moroccan Chickpeas with Feta
1/2 tsp fennel seeds
1/2 tsp coriander seeds
1 TBL olive oil
1/2 shallot, diced
1 cup chickpeas, cooked
1/4 cup white raisins
1 piece preserved lemon, pith removed
2 TBL chopped parsley
2 TBL chopped cilantro
1 TBL lemon juice
1 4 cup crumbled feta
1. In a hot, dry pan, toast the fennel and coriander for 2 minutes, or until fragrant. Use a mortar and pestle or spice grinder to grind the spices
2. Heat 2 tablespoons of oil in the pan, Add the shallot; cook 1 minute, or until softened. Stir in the ground spices, and chickpeas. Cook until heated through, 2-3 minutes. Remove from heat and stir in the remaining ingredients. Season to taste with salt and serve warm.
