INGREDIENTS:
1 lb. Ground Beef (ground chuck, 80/20)
1 lb. Ground Veal
1 lb. Ground Pork
½ Cup Onion (minced)
1 Bunch Italian Parsley (leafs only, finely chopped)                         à Meatballs
½ Cup Parmesan Cheese (grated)
¼ Cup Garlic (minced)
2 Eggs (lightly beaten)
½ Cup Italian Blend Bread Crumbs (not panko)
1 Tbsp. + 1 tsp. Kosher Salt
2 Tbsp. Basil Flakes
1 tsp. Oregano Flakes
½ tsp. Black Pepper
----------------------------------------------------------
2 (24 oz. or bigger) Jars of Spaghetti Sauce (Marinara, Vodka, etc.)

COOKING:
1)    Mix with your hands or put all the ingredients (except the pasta sauce) into your stand mixer with the hook attachment then turn on at low speed for 2 minutes to combine.
2)    Take the bowl away from the stand then use your hands to mix the ingredients a little longer.  Get a small scooper and make your meatballs.  We are looking for meatballs a little smaller than a golf ball.
3)    Get your crockpot and pour ½ of one bottle of your sauce across the bottom of the pot.  Add all of your meatballs then all your remaining sauce over the top.  Put the lid on and put on LOW for 8 hours.  DO NOT try to stir the meatballs and sauce for the first 5 hours.  They need time to cook and start firming up.

Cook's Notes: You can make the meatballs ahead of time (no more than 2 days) and assembled with the sauce in the crockpot then covered in the fridge.  If you want them ready by game time, make sure you turn on the crockpot 8-9 hours before kickoff.  Use the "Keep Warm" setting after they are done cooking.   While you can speed up the process by using the HIGH setting, I strongly recommend you do not.  The meatballs will toughen up and not come out as well.
