Chef Jon Paul's Tart Tatin
Serves 6

6 medium cooking apples cored and quartered
1 cup brown sugar
2 tablespoons butter
1 sheet puff pastry

1.    Place the butter and sugar in the bottom of a sauté pan.
2.    Arrange the apples on top.
3.    Place the sheet of puff pastry on top of the apples and trim to fit the pan.
4.    Heat the pan until the sugar melts and begins to bubble.
5.    Place the pan in a preheated 375-degree oven.
6.    Bake for approximately 25 minutes or until the pastry is golden.
7.    Allow to rest for 15 minutes and invert quickly onto a serving platter.
8.    Garnish with whipped cream or ice cream.
