Blackened Redfish

Blackened redfish on quina and lentils with smoked roma tomatoes, chipotle tobasco green onion lemon butter

INGREDIENTS:
Redfish or black puppy drum filet, bloodline out    7 oz
Blackening spice    ¼ cup
Quinoa and lentils, cooked and mixed    ½ cup
Lemon,     1ea zest
Smoked roma tomatoes    1/4 cup.
Green onions, chopped    1 T.
Buerre blanc seasoned with chipotle tobasco    3 oz.
Lemon for garnish    ½ ea
Parsley sprig    1 ea

METHOD:
1.    season fish with salt and spice on both sides cook till slippery in center
2.    sauté quinoa , lentils and lemon zest with s&p in 1T. whole butter.
3.    place quinoa/lentils on middle of plate top with fish ,meat side up
4.         place hot smoked tomatoes to the side of the fish
5.         ladle lemon butter around and top with green onions
6.         garnish with a ½ lemon and parsley sprig
