Cooking up some goodness with Dutch ovensPosted: Updated:
Fall is upon us! And if you're looking to get creative with a festive dinner the entire family can enjoy during a backyard cookout or even on a camping trip, Cabela's is dishing out functional and easy outdoor cooking ideas that you can whip up in a snap during their Ladies' Day Out event happening Saturday, October 10.
Ladies Day Out at Cabela's also features free workshops not only on outdoor cooking, but on kayaking, self-defense and much more. It's totally free and the first 100 attendees receive a goodie bag too.
One item popular with campers is the Dutch Oven. It's great for easy, outdoor cooking.
Here's what the chefs made for us on Wednesday:
4 lbs boneless chicken
1 bunch cilantro, minced
2 onions, thinly sliced
28 oz. can diced tomatoes
4 bunches green onions
juice of 2 limes
5 cloves of garlic, minced
?2 cups diced green chiles
Heat 14" Dutch oven with 14 coals on top & bottom. Pour light layer of oil to coat bottom, brown onion & garlic, add chicken,cook at high simmer 30 minutes. Add all ingredients, season with a light layer of each seasoning to cover top of mixture. Simmer till chicken starts to fall apart, reduce heat. Use potato masher to shred chicken. For spicier Tinga add a couple diced Serrano or jalapeño peppers with ingredients. Serve with tortillas or chips & sour cream.
