BALSAMIC WITH FRESH STRAWBERRIES AND PEACHES
Ingredients
¼ C        balsamic vinegar
6        strawberries, halved
1        fresh peach, sliced
Directions
Reduce balsamic until syrupy about 5 mins.
Arrange the fruit on platter
Drizzle balsamic over fruit and enjoy

ROMAIN LETTUCE WITH LIGHT OIL-DIJON VINAIGRETTE
SERVES:  4
PREP TIME:  10 MINUTES

INGREDIENTS
1 HEAD                ROMAINE LETTUCE
2T                HONEY
3 ½ T                EXTRA VIRGIN OLIVE OIL
1 ½ T                RED WINE VINEGAR
3 T                DIJON MUSTARD
TT                SALT AND BLACK PEPPER
1 T                BASIL
1 T                FLAT PARSLEY, CHOP
1 T                OREGANO

PREPARATION
SEPARATE THE LETTUCE LEAVES AND KEEP THEM WHOLE.  RINSE AND PAT DRY.

IN A LARGE BOWL, WHISK TOGETHER THE VINEGAR, MUSTARD, SALT AND PEPPER.   SLOWLY DRIZZLE IN THE OLIVE OIL TO EMULSIFY.  ADD THE BASIL, FLAT PARSLEY, AND OREGANO, MIX WELL.

CUT THE BUTTER LETTUCE INTO BITE SIZED PIECES AND DRIZZLE VINAIGRETTE OVER.   SERVE.


Parmesan Cheese Krisp
Ingredients
1 C        Reggiano Parmesan grated
6"        sauté pan

Directions
Warm sauté pan
Add cheese in a circle using a rubber spatula flatten cheese.
Cook on each side approximately 3 mins.
Take out of pan wait till it cools then enjoy

Spoke & Wheel Stuffed French Toast (serves 6)

Ingredients:

12 slices sourdough bread
butter for cooking

Batter:
1 cup heavy cream
1 1/2 tsp ground cinnamon
1 1/2 tsp vanilla extact
1/4 cup sugar
2 whole eggs
1/4 tsp salt

Filling:
5 oz cream cheese
3 fresh medium sized strawberries
1 1/2 tsp heavy cream
2 tbls powder sugar
1/2 tsp vanilla
1/2 tsp lemon zest

Directions:
Batter: combine all ingredients in a large bowl and mix well. Keep refrigerated until ready to use.

Filling: Chop strawberries into quarters. Combine all filling ingredients in food processor and blend for 20 seconds. The consistency should still be a little chunky from the strawberries.

To assemble: Take sourdough toast and cut off all edges. Take one piece of sourdough bread and dip in batter. Put a large spoonful of filling on top. Take another piece of sourdough and dip in batter. Then put on top of the first piece, as if to make a sandwich.
Put butter on flat top or griddle over medium heat. Grill until golden brown on both sides.
Garnish with powdered sugar and fresh whipped cream.
