Grilled Cantaloupe Salad With Goat Cheese, Chive, and Black Pepper Vinaigrette

Serves 5

1 cantaloupe

2/3 cup black pepper vinaigrette (See Below)

7.5 oz goat cheese

1 ounce fresh chives, cut into batons

Salt to taste

1. Slice melon into 15 to 18 slices. Lightly oil grill or grill pan and cook melon until slightly charred.

2. Cut melon in large dice.

3. Toss with vinaigrette.

4. Divide between serving plates.

5. Garnish with goat cheese and chives and sprinkle with salt to taste.

Black Pepper Vinaigrette

Makes About 3/4 Cup

2 T freshly cracked black pepper

1 T freshly squeezed lemon juice

1/3 cup plus 2 T extra virgin olive oil

1. Combine ingredients in a jar, cover, and shake vigorously.
