Deceivably Decadent Chocolate Cherry Cake

Serves 8 - 10

As needed Vegetable cooking spray

3/4 cup Pastry or cake flour

1/3 cup Unsweetened cocoa powder

1 1/2 tsp Baking powder

2 Tbsp Unsalted butter, room temperature

1 cup Light brown sugar, packed

3 Large Egg whites

1 Large Egg

2 cups Plain non-fat yogurt (prefer Greek style)

1 tsp Pure vanilla extract

2 cup Cherries, pitted and cut in quarters

1-1/2 tsp Orange zest

1 Tbsp Honey

As needed Mint sprigs

1. Preheat the oven to 350 degrees. Line the bottom of a 9 inch cake pan with parchment paper and spray lightly. In a medium bowl, sift together the flour, cocoa and baking powder.

2. In the bowl of an electric mixer fitted with a paddle, combine the butter and sugar and mix on low speed until incorporated. Beat in the egg whites, egg, 1 cup of the yogurt and vanilla. Gradually beat in the flour mixture until incorporated and fold in 1 cup of the cherries by hand. Pour the batter into the prepared pan and bake for 20 to 25 minutes, or until a cake tester inserted in the center comes out clean. Allow to cool in the pan.

3. Meanwhile, whisk the orange zest and honey into the remaining cup of yogurt.

4. Garnish each slice of cake with a dollop of the orange yogurt, the remaining cherries and a sprig of mint.
