2) In a frying pan over medium heat, cook your chorizo and chop it up into small pieces until it completely done. Remove from pan, drain fat and set aside.
3) In a casserole dish, first put your meat mixture in, then top it off with the green chiles then the cheese. Bake for 20 minutes then serve immediately.
4) Spoon desired amount over warm tortilla and roll up. Have some of your favorite salsa or taco sauce available to pour over mixture before rolling up.
Cook's notes: Chihuahua cheese is clearly the most desirable cheese to make this dish. If your supermarket doesn't carry this cheese or pork chorizo, Walmart Supercenters do. Here in the greater Phoenix area, Food City and Phoenix Ranch Market have a wide variety of Mexican food items. If you like a little more kick to your dish, use hot Hatch green chiles instead of the mild green chiles. *If you can't find the Chihuahua cheese in your local market, a close relative would be Muenster or white medium cheddar.
