Cocktail Time Margarita Drink and Dessert Recipes

Easy Elegance Cocktail
Makes 1 cocktail

Crush 2 meringue cookies to a fine crumb, rub glass rim with a lime wedge, dip in crumbs. Blend 4 ounces Sandra Lee Cocktail Time? Key Lime Margarita, 1 ounce cream of coconut, ice, and remaining meringue crumbs. Serve in rimmed glass. Garnish with lime wedge. 

Starita Cocktail
Makes 1 drink

¼ cup Sandra Lee Cocktail Time? Key Lime Margarita

¼ cup Sandra Lee Cocktail Time? Strawberry Margarita

1 splash lemon juice

¼ cup cranberry juice

¼ cup lemon lime soda

Starfruit for garnish

In a margarita glass filled with ice, stir together strawberry and key lime margarita and lemon juice.  Fill glass with cranberry juice, lemon lime soda and garnish with starfruit.

Easy Breezy
Makes 1 cocktail

In a glass, combine 

2 ounces Sandra Lee Cocktail Time? Strawberry Margarita

2 ounces Sandra Lee Cocktail Time? Key Lime Margarita

1 ounce pineapple juice

1 ounce club soda

Serve over ice.  Garnish with a kiwi slice and cherry.  

Lemon Key Lime Margarita Swirl Pie 

Makes 9 servings

40 vanilla wafers

2 tablespoons sugar

4 tablespoons (1/2 stick) butter, melted

1 can (14 ounces) sweetened condensed milk 5 egg yolks

1/2 cup Sandra Lee Cocktail Time? Key Lime Margarita

1/4 cup fresh lemon juice

1 teaspoon fresh key lime juice 1 to 2 drops green food coloring 1/2 cup frozen whipped topping 10 key lime slices 

1. Preheat oven to 375°F.

2. In a food processor, grind wafer cookies to a fine crumb. Add sugar and melted butter and pulse until combined. Transfer to a 9-inch pie dish and press into the bottom and sides of pan. Bake for about 10 minutes, or just until lightly browned. Set aside to cool. Reduce oven to 325°F.

3. In a large bowl, whisk together milk, yolks, key lime margarita, and lemon juice. Transfer 1/4 cup of filling to a small bowl and set aside. Pour filling into prepared pie pan.

4. Into the reserved filling, stir in lime juice and food coloring to desired shade. Drop small spoonfuls on top of yellow filling and swirl with a toothpick to marbelize. Bake for about 30 minutes, or just until filling is set. Cool completely.

5. Dollop heaping teaspoons of whipped topping on top of pie and garnish with lime wheels.
