Ingredients (1 serving)
1.5 oz./2 handfuls Arugula
2 oz./2 spoonfulsOrganic Strawberries (quartered)
1.5 oz./1 heaping spoonful Organic Blueberries
1.5 oz./1 spoonful Clementine Segments (cut in half)
1.5 oz./1 heaping spoonful Farro (Cooked, seasoned with Kosher Salt, and cooled)
1.5 fl. oz. Chia Seed Vinaigrette (Apple Cider Vinegar, Agave Nectar, Evaporated Cane Sugar, Kosher Salt, Fresh Ground Black Pepper, Xanthan Gum, Grapeseed Oil, Chia seeds whisked in at the end.)
2 Tbsp. Sprouted Almonds (lightly chopped)
2 Tbsp. Toasted Oats (Organic Rolled Oats, Grapeseed Oil, Agave Nectar, Kosher Salt. All ingredients combined and well mixed. Baked at 300 degrees long low fan for 30 minutes, mixing every 10 minutes.)
1 Tbsp. Blue Cheese
In a mixing bowl, combine arugula, strawberries, blueberries, clementine, farro, dressing and half of the almonds and oats.
Mix gently by hand until everything is well coated.
Plate and garnish with remaining almonds, oats, and blue cheese.
