Liberty Market serves up traditional Polish paczkis

GILBERT, Ariz. -- It's a Polish tradition enjoyed on Fat Tuesday before Lent: eating paczkis. And in Gilbert on Tuesday, Liberty Market is celebrating Paczki Day!
Paczkis (often pronounced poonch-keys) are rich, Polish doughnut-like pastries oozing with cream or custard filling. They're very similar to doughnuts.
They are especially popular in the Midwest, where lines form before dawn outside Polish bakeries in anticipation of this day.
Last year, Liberty Market's bakers, lead by Pastry Chef LaDawn Driscoll, made hundreds of the treats for folks from Detroit and Chicago looking for a taste of home, as well as for native Arizonans who were enjoying a new discovery.
This year, the market got special orders called in early, so bakers arrived at 3 a.m. to start making the pastries.
Paczkis are $3 each or $33 per dozen.
