Tortilla Soup

3 Carrots Sliced

3 Celery Stalks Sliced 

1/2 Bell Pepper Chopped

1 Onion Chopped

3 Tomatoes Chopped

3 Tablespoons Oil

8 oz Corn

4 Chicken Breasts Roasted & Shredded

1 Large Can Chicken Broth

1/2 cup Cilantro Chopped

2 Cloves Garlic Chopped

1 teaspoon Salt

1 teaspoon Pepper

2 Tablespoons Chili Powder

1 Tablespoon Cumin

 

Saute Carrots, Celery, Bell Pepper, and Onions in oil for 5 minutes.

Add remaining ingredients and bring to a boil.  Reduce heat and simmer for about and hour.

Enjoy!
