Cookin' with Dunkin'

We all know Dunkin' Donuts for its sweet treats and coffee, but did you know you can use its products as ingredients in your own home?

Dunkin' Donuts Dark Roast Coffee BBQ Rub

Ingredients:

2-3 lbs. Country Style Ribs
Or
4-5 Bone-in Chicken Breast or Thighs
Or
4-5 Steaks (NY Strip, Porterhouse, Filet etc)

Rub
2 tbs. Paprika
2 tsp. Onion Powder
2 tsp. Garlic Powder
1 tbs. Mustard Powder
1 tsp. Cayenne Pepper
1 tbs. Chili Powder
1/4 c. Brown Sugar
2 tbs. Kosher Salt
1 tsp. Black Pepper
3 tbs. Dunkin' Donuts Dark Roast Coffee

1) Combine all of the rub ingredients in a bowl, mix well.

2) Rinse ribs in water, pat dry with a paper towel, and generously rub the mixed spices onto the ribs. (Follow same process for chicken or steaks)

Cooking Ribs:
Heat grill on high. When grill is hot, turn grill on low and place the ribs onto the grill. Continue to cook slowly until rib meat pulls away from the bone. Remove from grill, allow to sit for 5-10 minutes before serving.

Cooking Steaks:
Heat grill on high. When grill is hot, turn grill on medium. Sprinkle a little oil onto the steaks before placing on the grill. Place Steaks onto Grill, Cook to your desired preference for doneness. Remove from grill, allow to sit for 10  minutes before serving.

Cooking Chicken:
Heat grill on high. When grill is hot, turn grill on medium. Place chicken onto grill, skin side down. Cook until internal temperature reaches a minimum of 165 degrees. Remove from grill, allow to sit for 10 minutes before serving.

Serve with your favorite sides; corn on the cob and baked beans. Or on top of a garden salad.

Dunkin' Donuts Dark Roast Coffee Vinaigrette Salad


Serves 4

Salad Ingredients:

12 oz Mixed Field Greens (Divided among 4 plates)
2 Dunkin' Donuts Muffins (large pieces diced)
1 Yellow bell pepper (medium dice)
1 Red bell pepper (medium dice)
1/2 Cucumber (we used an English cucumber, small dice or slice)
1 cup baby tomatoes
2 grilled chicken breasts with Dunkin' Donuts Dark Roast Coffee BBQ Rub
Dunkin’ Donuts Dark Roast Coffee Vinaigrette (Recipe Follows)

Dunkin' Donuts Dark Roast Coffee Vinaigrette:

1/2 cup Balsamic Vinegar
1 cup extra virgin olive oil
1 Tablespoon Honey Mustard
2 Tablespoon Dunkin' Donuts Dark Roast Coffee
1 Tablespoon combined, fresh Oregano & Thyme
Salt & Pepper to Season


Preparation:

1. Preheat oven to 350 degrees.

2. Remove the paper liner from the Dunkin' Donuts muffins and cut muffins into large diced pieces.

3. Place cut muffin pieces onto lined baking tray and place into pre-heated oven for approximately 15 minutes or until the muffins are a golden brown.

4. Rinse and prepare all of the other salad ingredients and place onto four individual serving dishes.

5. Slice the grilled chicken and divide amongst the four plates.

6. Divide the muffin "croutons" amongst the four serving plates.

7. Top with desired amount of Dunkin’ Donuts Dark Roast Coffee Vinaigrette.

Dressing:

1. Soak the Dunkin' Donuts Dark Roast Coffee in the Balsamic Vinegar. Let steep for 1 hour.

2. Strain the vinegar / coffee mixture.

3. Add herbs and mustard to the vinegar. Stir to combine.

4. Slowly add in the extra virgin olive oil until the dressing is mixed well. 

5. Season with salt and pepper to taste.

Dunkin' Donuts White Chocolate Raspberry Latte Truffles


Makes 40-50 pieces

Ingredients:

1 Small Dunkin' Donuts White Chocolate Raspberry Flavored Latte
1 lb. chocolate (semi-sweet or milk)
1 box graham crackers, crushed
Decorations – Have fun with it! We used:
    - Chopped Nuts
    - Powdered Sugar
    - Colored Decorative Sprinkles
    - Chocolate Shavings

Preparation:

1. Using a food processor, pulse the graham crackers until they are finely crushed.

2. Melt the chocolate in a heat proof bowl, over a double boiler. Stir until the chocolate is completely melted.  

3. Add the Dunkin' Donuts White Chocolate Raspberry Latte to the melted chocolate, stirring to incorporate.

4. Remove the chocolate mixture from the heat. 

5. Add the crushed graham cracker to the chocolate / latte mixture, stir well. 

6. Place the truffle mixture into the refrigerator to cool slightly. This allows the mixture to set. It will take approximately 30 minutes.

7. Once the Truffle Mixture has set, using a melon baller or spoon, form the truffles into small, bite-sized pieces.

8. Roll each truffle in the decorations / coating of your choice. Serve and enjoy!
