Maine Lobster Lady food truck brings lobster to Barrett-Jackson

PHOENIX -- Phoenix Magazine's January issue is out with an intriguing premise: Eat food from all 50 states without leaving the Valley.

The magazine named the most iconic state dishes from all 50 states, and then found the restaurant or food truck in the Valley that does that particular dish best.

One of those regional foods in fresh Maine lobster! And we found some at one of the Barrett-Jackson food trucks.

The magazine named the lobster roll from the Maine Lobster Lady food truck as the best Maine dish in Arizona. The food truck Maine Lobster Lady is run by a native Maine resident named Diane Santospago.

"Maine lobster is the finest in the world," says owner Diane Santospago. "The only kind." 

It's a family-run operation. Santospago runs the truck with her three daughters. And her husband is a lobster fisherman.

The Maine Lobster Lady's lobster shack on wheels delivers what she calls the "ultimate white meat," Maine lobster.

Responsibly harvested and sustainable, Maine lobster is healthy, low in fat and cholesterol, high in protein, good for you, and off-the-charts delicious.

Order up a lobster roll "traditional style" with chunks of chilled lobster meat tossed with a touch of lemon aioli in a butter grilled roll. Or try it warm, drizzled with melted butter.

The truck is a regular sight in Isle au Haut, Maine during the summer months, then returns to the Phoenix area in early November.
