Detox with golden beet soup

PHOENIX -- If you indulged a little too much over the holidays, try detoxing with this golden beet soup recipe from 24 Carrots Natural Cafe & Urban Juicery.

1/2 large red onion
3 cloves garlic
1 tablespoon ginger
3 large golden beets, roasted and peeled
4 cups vegetable stock
1/2 cup cashews
1/2 cup non-dairy milk
Salt and black pepper
1/2 tablespoon chopped cilantro
1 tablespoon olive oil
1 pinch turmeric
1 pinch cayenne
1 pinch ground cumin
2 tablespoons Bragg liquid aminos or soy sauce

Purée everything, except for 2 cups of vegetable stock, in a blender. Add to stock pot, add remaining stock, and heat to boil. Reduce to simmer for 10 minutes. Serve with warm, crusty bread and enjoy.
