MEAL DESCRIPTION          Chicken - True to block
-    Chicken
-    BBQ sauce
-    70/30 mix
-    Ranch dressing
-    Corn
-    Blackbeans
-    Onions
-    Jicama
-    Tomatoes

Chicken Black Bean Corn Chowder

Component 1: Chicken Black Bean Corn Chowder

1 cup chicken (grilled and diced)
1 cup corn
1/2 cup onion (diced)
1/2 cup carrots (peeled and diced)
2 oz. flour
1 cup potato (peeled and diced)
1 tbsp. garlic (minced)
2 cups skim milk
1 cup chicken broth
2 tbsp. olive oil
2 oz. red peppers (diced)
1/2 cup black beans
1 tsp. thyme
Sea salt (to taste)
Black pepper  (to taste)
Cilantro (chopped)

In a pot, add in olive oil. Heat until just begins to smoke. Add in onions and carrots. Cook until onions are translucent. Add in garlic. Cook for three more minutes, then add in flour and potatoes, followed by milk and chicken broth. Whisk together well, making sure no lumps with the flour. Cook for 5-10 minutes
Next, add in corn, chicken, red peppers and thyme. Cook until all vegetables are tender. Finish with cooked black beans. Season to taste with salt and peppe,r and garnish with cilantro. 

Chicken Stuffed Roma

Component 1: Chicken Mix

4 oz. chicken (grilled and diced)
2 oz. jicama (diced)
1 oz. cheddar cheese (shredded)
1 tbsp. green onion (chopped)
2 tbsp. ranch dressing

Mix all ingredients in a bowl and reserve to stuff the roma tomato

2 ea. roma tomato (cut in half length wise insides removed)
Chicken mix
Shredded cheddar cheese
Tortilla strips

Place tomato on a baking sheet. Fill with chicken mix and top with a sprinkle of cheese. Bake in oven just until cheese melts (can use toaster oven if you wish). Top with tortilla strips and serve.
